So, what kinds of things DO I eat for breakfast on a keto-lacto-paleo diet?  Yea, I totally eat breakfast.  Today, we are not talking about IF (Intermittent Fasting).  I know a lot of keto advocates love to skip breakfast–but I just ain’t one of them!  The idea of skipping breakfast just makes me sad.

This is where I have to say that this is not medical advise.  Everyone has different taste buds, and everyone who is eating keto has their own way of doing things.  There are a lot of variations out there.  My way includes breakfast.  Lots of breakfast.  Real food breakfasts–there are no smoothie recipes on this list.  You have been warned.

Keto Blue Cheese Dressing

While making buffalo-chicken stuffed avocados recently, I found myself completely out of blue cheese salad dressing–the one and only commercially made dressing that is zero-carb!!  Rather than run out to the store, I figured I’d try to make my own.  And OMG, this stuff is so good, I may never buy blue cheese salad dressing again!  Not only does it taste as good–or better–than store-bought, Making it myself means I can use full-fat yogurt and home made mayonnaise!  Win-win!

Yes, I said thin crust, and you can eat it with your hands.

This is the best (full-size) pizza crust I’ve made so far.  I’ve been searching for a pizza crust that feels like real crust, and most recipes for almond-flour crust DO feel right, but they all have a cup of cheese in the crust, then even more on top of the pizza, and while I do eat cheese, my lactose-intolerance means I can only eat so much of it.  So if there’s going to be cheese on a pizza, I want it ON TOP of it.

Truth be told, I’m not a huge fan of eggplant.  I could take it or leave it.  I like it more than brussels sprouts, but less than zucchini.  This is THE recipe that got me to like eggplant (at least, I like it cooked THIS way…).  In this day and age, with so much variety from all over the world, there is no reason NOT to try something new–and this one worked out great!
